When he drew the first sketches of what became the Pierrel style, Dominique set out to favor freshness and elegance; for this, he has favored Chardonnay, Pinot Meunier and Pinot Noir, from very calcareous soils classified as Premier Cru, in the blends of his wines.
It is in the hushed universe of Champagne cellars that Pierrel champagnes undergo a slow maturation of at least three years, a guarantee of optimal quality for each cuvée.
Rather than imposing a "house taste" on his cuvées, by working on his dosage liqueurs, he chooses to let the terroir of origin of the grapes he selects express itself, by carefully dosing his bruts thanks to a process particular and rare elaboration. The finishing of the wines at disgorgement is done with a natural liqueur made from concentrated grape must which preserves the aromatic richness of the cuvées, while optimizing their aging potential.
Champagne Brut Grande Réserve
Terroir
Our grapes come from plots located on the slopes of Épernay. The chalky soil, interspersed with crushed flint fragments, imparts exceptional finesse and purity to our blends.
Blend & Aging
Composed of 80% Pinot Meunier and 20% Chardonnay, with 20% reserve wines, this unique blend is only possible thanks to our specific terroir. It brings finesse and freshness to the resulting wines. The cuvée is then aged in our cellars for 3 to 4 years — well beyond the legal minimum of 15 months — to refine the bubbles and achieve optimal maturity.
Dosage
After around ten dosage trials for each cuvée, our Champagne is disgorged with a specially crafted liqueur d’expédition, designed to respect and enhance its aromas and characteristics. This crucial step is carried out with the utmost care to achieve perfect balance. The current dosage of this Brut is approximately 8 g/L.
Tasting Notes
Appearance: Bright gold with green reflections, crossed by a fine stream of elegant bubbles.
Nose: Dominated by yellow and white fruits, lifted by hints of citrus and floral notes.
Palate: Round, generous, and fruity, while remaining very fresh. The finesse of the bubbles on the palate is particularly pleasing.
Champagne Blanc de Blancs 2015 - Premier Cru

Blend & Aging
100% Chardonnay, vintage 2015, sourced exclusively from Premier Cru parcels. This wine is aged for 8 years in our cellars, far beyond the 36-month legal requirement, to refine the bubbles and reach ideal maturity.
Dosage
After multiple dosage trials, our Champagne is disgorged with a tailor-made liqueur d’expédition that respects and enhances its aromas. This essential step receives our full attention to achieve a perfect balance. The current dosage for this Blanc de Blancs Brut is approximately 6 g/L.
Tasting Notes
Appearance: Pale gold with green highlights, adorned with a fine, elegant stream of bubbles.
Nose: Marked minerality evoking flint and crushed chalk, evolving into fresh citrus, a hint of light honey, and white flowers.
Palate: Extremely fine bubbles. The attack is vibrant and refreshing, supported by creamy acidity.
Finish: Long and elegant, with notes of chalk, fresh lemon, and pomelo.
Champagne Brut Rosé
Terroir
Sourced from the same Épernay slopes as our other cuvées, this Brut Rosé draws its richness from a chalky terroir interspersed with flint fragments. This unique geological composition gives the grapes finesse, freshness, and elegance.
Blend & Aging
A subtle blend of 90% Chardonnay and 10% Pinot Meunier vinified as red wine. It combines the finesse, freshness, and tension of Chardonnay with the fruity indulgence of red Meunier. Aged extensively in our cellars to reach perfect maturity and refine the balance between structure and elegance.
Dosage
As with all our cuvées, several dosage trials are performed to achieve ideal aromatic balance. The Brut Rosé is disgorged with a liqueur d’expédition that respects the wine’s delicate identity. Current dosage: approximately 8 g/L.
Tasting Notes
Appearance: Pale pink with salmon highlights, featuring fine, consistent bubbles.
Nose: Expressive, with notes of red berries (raspberry, redcurrant), mixed with fresh citrus and white flowers.
Palate: Delicate and well-balanced, both fresh and indulgent. Flavors of wild strawberries and pink grapefruit linger on a crisp, elegant finish.
